Three varieties of homemade pizzelle.

Anise Pizzelle. The original, delicate Sicilian pizzelle, with the subtle taste of anise.

Where do I start to describe the love we have for pizzelle? We kids (brothers, sister, cousins) quickly realized that pizzelle would be at every family function, so we came to expect them. Whether it was the Christmas Eve party on my mother’s side of the family, Christmas Day on my father’s side of the family, a wedding, a shower, a graduation, retirement, even the occasional birthday. Typically, they were offered on a platter, dusted with powdered sugar. So simple, yet so delicious and satisfying!

Ingredients: Flour, sugar, eggs, butter, baking powder, anise extract, anise seed.

Vanilla Pizzelle

One of my aunts used to make them with vanilla instead of anise. I wish she were here so I could ask how that got started. For Baker’s Lane Biscotti, it started in 2025, when customers who don’t like the taste of anise had no other option. They have become a best-seller.

Ingredients: Flour, sugar, eggs, butter, baking powder, vanilla extract.

Gluten-free Vanilla Pizzelle

My gluten-free patrons were asking about a pizzelle that they could enjoy, so I attempted to make them with the gluten-free flour blend that I use for the biscotti. They turned out lovely, didn’t stick to the iron, and have become a popular choice. One of my GF customers saw them and said, “You are doing God’s work.” How delightful.

Ingredients: Gluten-free flour, sugar, eggs, butter, baking powder, vanilla extract.
